• 2 tbl olive oil
  • 4 cloves garlic roughly chopped
  • pinch of red pepper flakes
  • 14.5oz of diced tomatoes, i used fire roasted
  • pinch of sugar
  • 1/3 cup of olives
  • 1 tbl capers
  • salt and pepper for seasoning

i love pasta. i love carbs. i also love butter and anything full of fat, pasta wins though. how could it not?

last night i was sitting on the couch with the kids, they are both sick, i had yet to even think about dinner. i started thinking about back in the day, 4 years and something months ago, whenever i wanted something to eat and didn’t feel like cooking i could just go out and get it. a quick walk down a city block and i could have anything i wanted for dinner. not so much anymore. i started to day dream.

when we were living in brooklyn we had a favorite little italian restaurant. it was so cute and open, in brooklyn you don’t find that often. during the warmer months there was an outside patio and during the colder it was enclosed. so beautiful. grape vines and candles, it felt like you were somewhere in the countryside not in the middle off the city. not only did they have fresh brick oven pizza but a puttanesca that was to die for.

that was my plan for dinner, i couldn’t wait for e to get home to eat. we both needed a moment, you know, just to sit down enjoy each others company and eat in peace. i needed something quick, filling and good. i found a recipe for puttanesca which included anchovies. i don’t do anchovies, do you? this puttanesca was anchovies free, and amazing! i simplified the recipe and sped up the process of cooking by about 10 minutes. best meal we have had in days.

  1. in a separate pot, bring water to a boil and add your pasta.
  2. in a skillet, add olive oil and heat up. add garlic and red pepper flakes. cook for about a minute, do not let the garlic brown, just soften.
  3. to the skillet add tomatoes and sugar. bring to a boil, cook on a medium simmer, till tomatoes break down for about 5 minutes, add capers and olives. cook for about 5 more minutes.
  4. that’s it. add your pasta to the skillet and mix.

serve this with a salad and you are all set,
