• 5 tbl olive oil
  • 3 pieces of bacon roughly chopped
  • 1 onion minced
  • 3 cloves garlic roughly chopped
  • 1/2 tsp hot pepper flakes
  • 3/4 of a can of whole or crushed tomatoes
  • 1 tbl fresh basil chopped
  • 1/2 cup parm cheese
  • salt to season

at a friends house the other day i spotted lidia’s Italy from across the kitchen.

just a day before i had been looking at one of her cookbooks at tarry market. i slowly ran walked over and took it off the shelf.

i do stuff like that, you got me.

and then i took it home.

i put the kids to bed and sat on the couch. and then i found this…bacon, onions, tomatoes, are you kidding me, YES!

make this, i insist.

spaghetti with a bacon & onion tomato sauce     adapted from lidia’s italy: maltagliati with onion-tomato sauce

  1. in a skillet, warm up half the olive oil and stir in bacon. cook stirring for a couple minutes. you don’t want to brown it, just cook it. stir in the onions, garlic and pepper flakes, saute for another 5 minutes on a medium simmer.
  2. pour in the tomatoes and bail, season with a pinch of salt. bring to a boil then a back to a medium simmer for about 10 minutes.
  3. in the meantime, boil your pasta. when it is done, add to your sauce. toss with half the cheese and reserved olive oil.
  4. plate and sprinkle with extra cheese.
