• 1 cucumber
  • 1 cup of white wine vinegar
  • 1 cup of water
  • 1/3 cup of sugar
  • a hand full of dill

it’s officially spring here. we had our first bbq with friends and my dog attacked a groundhog. aaahhh sounds of summer, children screaming with glee and unwelcomed wildlife. thankfully my garden will be fenced in this year and my vet who happens to be one of my good friends can bring home rabies boosters.

while the kids were screaming and the dog was hunting down local wildlife, we had a bbq. our first real bbq of the season. i was so excited, hot dogs, burgers, steak, the list just goes on. one thing i love about bbq, the sides. the salads, the beans, the corn, that’s what makes a good bbq. there is nothing like a good pasta or cucumber salad to get things going.

i was officially unprepared for this bbq however, it was a last minute get together, and i had an hour to prepare (we spent all afternoon looking for my mothers day gifts, a bbq and a raised garden bed). 5 kids and 5 adults, needed lots of kid friendly foods as well as foods we (the adults) would enjoy.

my kids love cucumbers, they eat them with “dip” at almost every meal so i always have them around. a red onion, some vinegar, sugar and water throw in some dill and your set. sounds easy right? it was and you will love this recipe. it takes an hour to marinate so you can make it that day and when your ready to serve your set.

a quick cucumber salad

  1. in a saucepan, bring water, vinegar and sugar to a boil. turn off the heat and mix until all combined.
  2. slice your cucumber and onion, place in bowl or jar with dill. pour vinegar mixture over the cucumbers and mix. let sit for up to an hour.
  3. serve. that’s it.
