• 3 slices of bacon minced
  • 3 cloves of garlic (i used above)
  • a head of chard sliced
  • about a 1/4 cup of stock

here in the hudson valley farmers markets are finally starting up. tomorrow is our big opening day! the kids are so excited, they love going. i get a huge bag and we go explore. they have music and usually they have a kids corner where they have someone reading or yoga (yes one time they had yoga).

at our farmers market local businesses participate and offer food at lower costs, like our local indian restaurant (that is our favorite food vendor, the kids love a good mango lassi). we have a lot of local artisans too, once in a while you can catch marcie there selling handmade dresses (which we adore).

last friday stone barns opened up there outdoor market, we caught it between thunder storms (we have been having a lot of those). although there wasn’t tons there, i was still able to pick up some local veg (see above). all of this was grown in their greenhouse. we got garlic (the things up there that look like green onions), rainbow radishes, and rainbow chard. we came home cleaned up, washed our veg and went to work.

i wanted to use a little bit of everything we bought. we love salads so that was a given. the garlic was not strong or harsh like raw garlic could be, it was very woodsy but clean, it had the taste of mild garlic but consistency of an onion. the radish was crisp, a little spicy but cool and refreshing.

we decided to saute the chard. i love any type of green and actually debated creaming it (next time). i was to excited about the veg and really wanted to taste it. it was simple really, and since the chard was so fresh it cooked up in minutes.

next time i find chard i think i am going to try a soup, or maybe a pasta with fish?

recipe for a quick sauteed chard with bacon

  1. saute you bacon in a heavy bottomed skillet, when almost crisp add your garlic. saute for about a minute and then add your chard.
  2. cover for a minute, giving the chard some time to wilt. lift cover and mix, add stock and cook for about another 5 minutes.

was fabulous and done so quickly. i can’t wait until tomorrow! will let you know what i find :-)
