• 1 cup of flour
  • 3 tbl of sugar
  • 1 3/4 tsp baking powder
  • 1 tsp salt
  • 1 cup of milk
  • 2 eggs
  • 3 tbl melted butter
  • 3 tbl sprinkles

as i was pouring the sprinkles into my pancake batter this morning i realized this would be an awesome breakfast for christmas morning. look at the colors and then imagine your child’s face when they come running to the table after opening up all their presents and see this. what could be more fun to eat then confetti pancakes.

pancakes are one of my kids favorite breakfasts. i don’t make them often, really, who has the time?

in our house the morning consists of chaos. there is fruit and cereal, a quick run to the bathroom to brush our teeth and then it’s out the door to run for the bus. days like this, when we are taking it easy and relaxing, this a great breakfast that is sure to make everyone not only happy, but fill up their bellies for an awesome morning.

confetti pancakes     adapted from the joy of cooking

this recipe makes about 20 silver dollar pancakes.

  1. in a mixing bowl combine the flour, baking powder, sugar and salt, give it a whisk.
  2. melt your butter and add to the flour mixture with milk and eggs. whisk.
  3. add sprinkles and mix.
  4. in a skillet or on a griddle, ladle batter and cook for about 2 minutes a side. when the pancakes are ready to flip they will bubble up and be easy to scoop and flip.

serve with syrup, some fresh fruit and enjoy watching your kids face when they see whats for breakfast!
