• 6 boneless chicken thighs
  • 1 onion sliced
  • 4 cloves of garlic smashed
  • 1 squash cubed
  • 1 14oz can of diced tomatoes
  • 1 bottle of beer, i used an blue moon winter brew
  • 3 tbl flour
  • 1/4 cup water
  • handful of fresh parsley

should i even try to type today? no, and you know why? there is screaming. must leave, must go.

but real quick, because you know i can’t stop myself…

sometimes i get emails (really, i do). sometimes those emails contain recipes. sometimes those recipes are for slow cookers (yes!).

williams-sonoma sent me an email last week (me! although i’m sure 100 million other people got this email also). it called for short ribs, i had none, but i did have chicken. i also didn’t have butternut squash, but an acorn squash worked just as well.

what i ended up with was an amazing pot of braised chicken. it cooked all day, and when i walked in, my house smelled wonderful. my kids even mentioned the smell, sometimes i wonder if it’s just me (most of the time it is, i have a sensitive nose).

although this isn’t one of those recipes you just throw in the crock pot, it involves browning, it’s worth the 10 extra minutes. this is a great crock pot meal that taste like it has been on the stove top all day.

{crock pot} ale braised chicken with squash     adapted from williams-sonoma

  1. in a skillet, brown your chicken in a touch of olive oil. when brown transfer to your crock pot.
  2. over the chicken add your sliced onions, garlic, and squash. pour in the tomatoes and beer.
  3. cover and cook on low for 7-8 hours.
  4. when chicken is cooked, spoon out of the crock pot and set to the side.
  5. in a bowl mix flour and water together, add to crock pot with fresh parsley.
  6. cook on high for another 15 minutes.

we served this over pasta with some garlic bread. it was a fabulous dinner with extraordinary flavor. worth the time of browning the chicken. we truly enjoyed it and had enough leftovers for lunch the next day.
