• 1 cup of shredded carrots
  • 1 tbl fresh grated ginger
  • 1 tbl white miso
  • 2 tbl sesame oil
  • 2 tbl plain rice vinegar
  • 1/2 cup grapeseed oil
  • 1/4 cup water
  • 1 garlic clove

we eat a ton of salad, which i am sure i have mentioned a million times. it could be a dinner or a side. to me a salad completes a meal.

i have been really trying to make my own dressings. my kids love salad and they love to dunk veggies in anything that has color. little by little i would love to replace the store bought dressings they love with my own that i know are healthy and taste good.

i went to college in nyc. it was a great place to “grow up”. i got to experience a lot that i would not have going to school in a small town. i met the most interesting people and worked in even more interesting places. i ate in great restaurants, mostly little hole in the wall places that tourists would not walk into. there was place on st marks, a place that i spent a large amount of my time, called dojo’s. they had the most amazing soy burgers that were served over brown rice. smothered in cheese and topped with avocado, it was a little piece of heaven, and a place i could afford being a college student.

as well as my addiction to their soy burgers i was also addicted to their salad dressing. a simple carrot miso dressing that was even better then the burger. as you’ve noticed, i have a salad addiction (insert big smile here). it was always a dressing i have wanted to recreate, but never really got it. since salad has been a huge part of our dinners this summer, i decided to try it again. as my kids would say, TADA! i did it.

i am so excited to share this with you. all you need is carrots, some garlic, miso paste…well, check out the recipe, i think you will like it.

carrot miso dressing

all you need for this recipe is a food processor. one of those hand blenders would work also.

  1. first step, grate your carrots, or use pre-shredded ones like i did. add carrots and water to the processor and pulse a couple times, just to break down the carrots.
  2. add all of your ingredients and pulse to you have your desired consistency.
use this as a dressing for salads, a dip, pour it over a veggie burger, or just eat it by the spoonful :-) happy meatless monday!
