what is your favorite go to menu item? have you ever thought about it? i’m not talking a specific food in general, i’m talking an ingredient. something that you see that immediately gets your interest.

mine is truffles. not those delicious little pieces of heaven covered in chocolate (although i love those too), flavored with anything and then dusted in pure goodness (i’m getting off topic here), i’m talking about those little suckers that come out of the ground. you know, the ones pigs snort out. the ones that I couldn’t live with out eating once every couple weeks (days).

i have my little collection. salt and oil, butter on the occasion, and my very favorite honey.

so right now you might be asking yourself, why are we discussing truffles? where is your recipe? you might not, but in case you are i’ll explain myself.

this past weekend we had pizza night. something we do often here. the kids get to roll out the dough and top their own pizzas. it’s always a crowd pleaser and an easy dinner to get ready and on the table quickly(ish). while the kids were rolling out their dough i started to think about what i wanted for my toppings. vegetables are always my favorite as well as fresh mozzarella, some basil and onions. sometimes a good red pepper always hits the spot. my ultimate topping however, mushrooms.

mushrooms are fine sliced raw, thrown on the pizza and then cooked but sauteing them really brings out a great meaty flavor. it’s a flavor the raw mushroom just doesn’t have. while i was sitting there sauteing my mushrooms in…wait for it…truffle butter i started going over a list in my head. what else can i make with truffle butter? what else can i add truffle salt to? what about the oil? salads? steaks? pasta? other vegetables like asparagus? and then in my own special way (yes, i will admit, i’m special) i started to come up with a list in my head of all the things i could do with truffles.

so out of my own freakishly weird specialness i decided to let you in…in, yeah, that’s what i said. in on the specialness of truffles. whether it be truffles in oil, honey, butter, salt, it doesn’t matter, what ever you add it to, it makes it special. whether it be a plain old egg, make it special by frying it in truffle oil, or better yet, sprinkle some truffle salt over it.

so, here is my list. my list of all the things i can imagine cooking, baking, frying, you get the picture, truffles or oil/salt/honey with.

  1. pizza
  2. fried eggs
  3. scrambled eggs
  4. cheese and truffle omelets
  5. shrimp with truffle risotto
  6. asparagus
  7. sauteed mushrooms
  8. sauteed onions
  9. or both together, onions and mushrooms sauteed with truffle butter
  10. cheese, how can i forget cheese
  11. ricotta cheese topped with truffle honey
  12. popcorn
  13. french fries
  14. french toast
  15. mac and cheese
  16. my friend patty mentioned chick peas
  17. mashed potatoes
  18. smashed potatoes
  19. roasted chicken
  20. ravioli
  21. a white lasagne with truffle infused ricotta
  22. meatballs
  23. meatloaf
  24. felafel (is that going to far)
  25. this salad, oh add a sprinkling of salt to that.
  26. paella
  27. grilled cheese
  28. pasta

so i got to 25 (because of the internets, this list has been added to, see update below). now here is where you come in. help me out, what would you add truffles to? i’d like to get to 100. why a 100? not sure, but it seems like a good #.
