a week or so back i came across this awesome looking dish by jamie oliver for an asian noodle salad. i was so excited, it kind of reminded me of a dish i used to always order from this great thai place in brooklyn…

the noodle salad was full of veggies, herbs, and this delicious light dressing. you could order strictly veg or add on steak or even shrimp. as many times as i have looked for a similar recipes or tried to make it on my own, i have never come across anything even close. this was not only spot on but better.

i love cooking from jamie recipe’s. i think he is brilliant, i adore him. his recipes have a lot of what i look for in a meal. fresh herbs, veg, chili peppers (my favorite of course) and tons of flavor. his recipes are pretty easy to make, in fact, there are a lot of times i just watch him and say to myself “why did i never think to do that?”.

the following recipe is variation of jamie’s asian noodle salad. i adjusted some seasonings and some ingredients because i wanted to introduce extra veg that i had laying around as well as steak. take this recipe and adjust it to your liking. add what ever kind of veg you fancy, try adding fish or even chicken.

steak and noodle salad    serves 2     adapted from jamie oliver’s asian noodle salad 
for the steak stir fry:

  • 1/2 a pound of steak, i used skirt steak
  • 2 tsp chinese five-spice powder
  • 5 tbl olive oil (2 for the marinade, 3 for the stir fry)
  • 2 cloves of garlic, sliced
  • 2 tsp freshly grated ginger
  • 2 tsp sugar 

for the dressing:

  • 2 limes, juiced, that is about 3 tbl
  • 1 tsp fish sauce
  • 1 fresh chili pepper sliced or minced (you could use red pepper flakes, about 1/4 tsp or so)
  • a handful of fresh cilantro, chopped
  • a handful of fresh mint, chopped

for the salad:

  • 1 package (3.75oz) of bean thread noodles
  • 1 cucumber
  • 1 red onion
  •  tomatoes 

for the steak: i like to use a zip lock bag, makes for easy clean up. slice your steak up and add it to your bag. mix 5 spice powder and sugar with 2 tbl of olive oil and pour over steak. marinate for about 2 hours or more. 

when you are ready to cook, grate ginger and slice garlic, saute for about a minute in 3 tbl of olive oil, add the steak and stir fry till cooked, about 5 minutes.

another option (this is what i did last night because i made it again, that is how good it was): bbq the steak and then slice it. quickly throw it in the pan with the ginger and garlic, toss to coat under a low flame for about a minute and then set aside.  

meanwhile, for the dressing: mix the lime juice with the herbs and fish sauce in a bowl and set aside. as well as the steak, this is something you could prepare early on in the day. the longer the herbs and chili pepper sit then better the dressing will be.  

to prepare the salad: follow the directions on the back of the noodle package. they say to soak the noodles in warm water for 10-15 minutes. i found i actually had to cook them for about a minute. no matter what the temperature of the water was, i could not get them to loosen up. when the noodles are ready add them to a big bowl. 

cut and slice up all your veg and add them to the bowl of noddles. add dressing and toss, then add steak. give it a quick toss and serve. 

this was an excellent dish, we made not just once last week but again last night. it reminds me of our first place, you know, when ordering in every night was fun!
