my husband told me not to share this…but i had to. i can’t hide anything from you. you know, especially when something like this comes along.

many moons ago i got my hands on this amazing moroccan spice rub. through the years it disappeared and my lamb chops have never been the same.

i can’t find it anywhere which particularly sucked last night since i picked up lamb chops from whole foods and all i wanted to do was rub that sweet and spicy rub all over it.

this is the kind of rub you have dreams about. the kind of rub that forms this crust that is indescribable. seriously, i was speechless. especially since not only was i able to replicate it but i am pretty sure it is better the original i was trying to re-create.

moroccan spice rub

in a jar, a measuring cup works just as well though, mix all the ingredients:

2 tsp of: white sugar, brown sugar

1 tsp of: cumin, ground ginger, cinnamon

1/2 tsp of: onion powder, garlic powder, ground cloves, ground red pepper (cayenne), turmeric, allspice, coriander

you might be thinking to yourself right now…wow, that seems like a lot of spices? well, yes it is. but if your trying to clean out your spice cabinet (yeah i have one of those) this is a great way to do so. it can sit in your shelf for months in a sealed jar.

and this is the finished product…check out that crust…next i try it on chicken.
