• 2-3 tbl of bacon fat or olive oil
  • 1 onion chopped
  • 2 carrots chopped
  • 3 stalks of celery chopped
  • 2 cloves garlic chopped
  • 1 cup of split peas
  • 6 cups of stock, i used vegetable stock today
  • 2 tbl fresh parsley
  • salt and pepper to taste

now to the recipe of the day.

i have fond memories of my dad making split pea soup when i was a kid. the one thing i remember vividly is reminding him to put hot dogs in it. that was my favorite thing about it. now a days, i skip the hot dogs and go for chipotle bacon fat. of course if you want to make this vegetarian you can use olive oil or even that fake bacon, it’s not going to have that same smokey bacon flavor but it will be pretty close.

most split pea recipes are similar, ham hocks or bacon, celery and carrots, it’s not that hard or complicated. i blend mine because i like it creamy, others like it chunky, the great thing about cooking it yourself is that you can make it anyway you want.

split pea soup

note: i used bacon fat today, we had bacon this morning for breakfast, chipotle bacon, it was good stuff. the smell of it cooking reminded me of split pea soup. so i saved my left over bacon fat in a cup.

  1. heat up pot and add your fat or olive oil, when shiny, add onion, carrots, celery, garlic, parsley and heat till translucent about 8-10 minutes then add split peas for about 2 minutes.
  2. add stock, salt and pepper and bring to a boil.
  3. when soup comes to a slow boil, bring it down to a simmer and let it cook.
  4. this is a pot of soup i like to cook all day, i like to cook most of my meals all day, but this gives the peas time to soften up and become creamy.
  5. after about 3 hours, i take out my handy hand blender and blend to desired consistency.

tonight we had it with a nice hunk of fresh baked bread and a salad. can you tell i love soup. i think i can eat it every day!
