• 3 oranges juiced
  • 2 limes juiced
  • 2 tbl of cumin
  • 1 tbl salt
  • 1 cup of water
  • 12 garlic cloves
  • 3.5 pounds of pork stew meat

tex mex, anything that has to do with tacos or burritos, well, yeah, winner in my book.

when i started to drive i found taco bell (clearly this was a long time ago) and then chipotle came to ny. a winner in my book. anywhere i can get a soft taco with pico and pulled meat, well, they had me at pulled slow cooked meat.

this is version of carnitas take about 2 minutes to throw together. i mean seriously, you just can’t beat that. imagine coming home from a long day and walking into your house, the smell, oh my, the smell of this cooking is just amazing, you can smell the cumin but the way the spice and juice comes together is amazing. it forms a wonderful broth like sauce that the meat just soaks up.

ah, heaven. seriously. go. run. your crock pot is calling you!

{crock pot} pulled pork carnitas

  1. throw your pork in the crock pot (not literally, just put it in). add cumin and salt. get your hands dirty and combine the spices with the pork.
  2. add the juice of the 3 oranges and 2 lemons and the water.
  3. throw the garlic in
  4. set the crock pot on low and leave it alone for 8-10 hours.
  5. when the time has passed stick your fork in the crock pot and watch the meat fall apart.

serve with soft tortillas and all the fixings. lettuce, salsa, pico, guac, whatever you fancy, throw it in and enjoy!
