• 2 tbl of butter
  • 1 onion chopped
  • 2 cloves of garlic chopped
  • 1 small head of cauliflower cut up into pieces
  • 4 cups of chicken or veggie stock
  • 1 cup of cheddar cheese
  • 3/4 cup cream or milk
  • pinch of salt and pepper to taste

i’ve always loved to read. i was one of those kids who used to sit in the corner of a room with a book. when i was 12 i wanted to write action adventure romance novels. bet you didn’t know that. i’ve always loved that i could sit and read a book and be brought to a different dimension. my imagination let’s loose and for a split second i’m that person in the book. i’m the person living what’s going on.

books have brought me to tears. books have brought smiles to my face and books have saved me from incredibly bad days. i’ve always thought books have an ability to keep people “alive”. know what i mean?

i love the smell of books. i love the way they feel flipping the pages. i love the way they let my imagination soar.

i’ve been totally consumed by a new book. something that rarely happens because i have no time to read. i haven’t been able to put it down. i may have not experienced what the characters are going through but there is a connection. something that makes me feel for the person, something that makes me want to keep reading, something that makes me want to reach inside the book and just scream.

make your self a pot of soup, kick back, relax and take it all in…i probably wont see you for a while…i’m hooked.

{crock pot} cauliflower soup

  1. to a crock pot add 4 cups of broth and cauliflower.
  2. in a skillet, saute onion and garlic and add to the crock pot.
  3. cook on high for 3-4 hours or on low from 6-8 hours.
  4. blend soup, i use my immersion blender, add cream and cheese and cook on high for another 5-10 minutes.

sit down and enjoy with a good book. happy day to you.
