• 5 roasted peppers
  • 2 cloves garlic
  • 1/4 cup olive oil
  • handful of chopped cilantro
  • pinch of salt and pepper to taste

roasted peppers…it’s that time of the year.

you know when it’s sunny outside and irregularly warm for march.

you know right? when all your bulbs are coming up and the smell of pollen is everywhere.

ok, sure, i’ve had a headache for 4 days and my eyes feel itchy and bloodshot…

embrace it because it’s beautiful.

my favorite tree on my block is budding and this week i start my seedlings.

i even found a nice spring scent! what could make a girl like me happier.

wait actually, the only thing that could top that would be if someone would fill my propane tank for the bbq because that thing freaks me out.

all this makes me want to roast peppers and bbq meat. i’m odd like that. warm weather = bbq and roasted peppers. what better way to use a roasted pepper then in a salsa. all pureed with garlic and cilantro. great to spice up your steak. awesome used a spread in a sandwich. a great way to start bbq season.

roasted pepper salsa

  1. take 5 roasted peppers and add to a food processor with olive oil, garlic and cilantro. blend. taste, add salt and pepper to taste.

we served this over steak. the boy and girl were eating it by the spoonful.

this would work great over fish. over even bake it with chicken…hmmm…tonight’s meal?
