• 1 cup of olive oil
  • 1 sprig of fresh rosemary
  • 2-3 sprigs of fresh thyme
  • handful of garlic (i used 9 smallish cloves)
  • 2 bay leaves
  • 1/4 cup balsamic vinegar

even after that freak snow storm some of my garden was salvageable. mostly the rosemary and thyme, the more hearty of the herbs. everything else is pretty much gone except for some lettuce that i planted later in the season for an extra fall crop.

we don’t do steak much in this house but when we do i try to come up with new ideas for marinades. fresh herbs and of course garlic always make the cut (unless it’s a dry rub). i have made a couple before that i really love but i was in the mood for something light, something that would just play with the steak, give it a nice color and really enhance the flavor.

this marinade is simple, doesn’t take long and doesn’t need to marinate over night. give it a try, especially if your bbq is still sitting in your yard.

rosemary, thyme and balsamic marinade

  1. combine all the ingredients in a frying pan except for the vinegar. heat up until oil starts to bubble and herbs starts to sizzle. turn off heat and vinegar and set aside to cool.
  2. clean, and prepare your meat. we used a skirt steak which a perfect steak for a marinade like this.
  3. add meat and marinade when cool to a ziplock bag and set in your fridge for at least an hour.

bbq or grill (you can even use your broiler) and enjoy!
