this is the first day i have been alone in weeks. i don’t know if you can here it too but there is silence (hear it? it’s marvelous).
it will end in about an hour so i am going to keep this short and sweet.

white bean and tuna salad (with parsley vinaigrette) adapted from bon appetit
- about 2 cups of spinach chopped
- about 1/2 can of cannellini beans rinsed
- 2 stalks celery chopped
- 1 can of tuna drained
- to a bowl or plate add chopped spinach, bite size pieces of celery, beans, drizzle with dressing and toss (see below) and top with tuna.
parsley vinaigrette
note: there is enough vinaigrette here for 4-6 servings. it makes one cup…great to use as a marinade too
what you need: 2 cup chopped parsley, 1/2 cup of olive oil, 3 tbl lemon juice, 1 /2 tbl vinegar (i used a white balsamic), 1 clove of garlic, salt and pepper.
blend all the ingredients in a food processor.
You know, lunch is my favorite meal because I can make special treats just for myself! This sounds delicious.
i love anything i can make for myself. now a days it’s rare for me to be able to sit down and enjoy a meal…preparing myself a special lunch always makes me feel fantastic though (and then i can hold out to dinner time with out really snacking).
