this is the first day i have been alone in weeks. i don’t know if you can here it too but there is silence (hear it? it’s marvelous).

it will end in about an hour so i am going to keep this short and sweet.

salad for 1.

white bean and tuna salad (with parsley vinaigrette)      adapted from bon appetit

  • about 2 cups of spinach chopped
  • about 1/2 can of cannellini beans rinsed
  • 2 stalks celery chopped
  • 1 can of tuna drained
  1. to a bowl or plate add chopped spinach, bite size pieces of celery, beans, drizzle with dressing and toss (see below) and top with tuna.

parsley vinaigrette

note: there is enough vinaigrette here for 4-6 servings. it makes one cup…great to use as a marinade too

what you need: 2 cup chopped parsley, 1/2 cup of olive oil, 3 tbl lemon juice, 1 /2 tbl vinegar (i used a white balsamic), 1 clove of garlic, salt and pepper.

blend all the ingredients in a food processor.
