• 1 cup of pineapple juice
  • 1 cup of low sodium soy sauce
  • 1 jalapeno pepper sliced (seeds or no, your choice)
  • ginger (about a thumb worth) sliced into sticks
  • 5 cloves of garlic smashed

i have this friend debbie. she posts recipes (see here). i have posted about her before (see here). seriously, i heart debbie. espcially after i saw this!

i am a huge skirt steak fan. i find it doesn’t really need marinade (well, a whole lot of marinade), but it’s nice to have a good one on hand. and let’s be honest, a great marinade is hard to come by. really, it is. unless you buy that bottled stuff, which i do occasionally (see here). but this my friends, this is the…ok, let’s keep this clean. but really, it’s awesome.

the first time i made it i kept it simple, followed the recipe. it’s not hard. empty some stuff into a baggie, throw the steak it, let it sit. but this time…this time there was ginger and a jalapeno sitting in front of me singing my name (really they were singing, im not loosing my mind…yet). i just had to add them, but while i was throwing those items in what about garlic.

garlic, garlic and i go way back. i can write a whole post on how much i heart garlic, how much i love to add it to everything, how i can eat it raw…oh yeah, and how i tried to grow it…it didn’t work, but now i’m getting off topic cause all i really wanted to tell you is how much i love this recipe and how easy it is to make. just ask my friend over at stellar baby (there is a reason i am mentioning her and you will find out soon enough). she was here this weekend and she got to try it…should i tell you what happened? she and her partner over there went through almost 5 pounds of steak…yes people, you heard right.

debbie’s polynesian flank steak marinade with a twist      adapted from parents need to eat too

  1.  add your steak to a bowl, baggie or whatever.
  2. dump in pineapple juice, soy sauce, garlic, ginger and jalapeno
  3. stick it in your fridge and let it marinade for at least an hour, 4-5 really makes a difference but let’s face it, sometimes there is just never enough time.
