- 3 peaches split and grilled
- 1/2 red onion
- 1/2 jalapeno pepper
- 1 lime juiced
- handful of parsley and cilantro
- salt and pepper to taste
during the summer i tend to over buy fruit. i can’t help myself. it all looks so good. so ripe, so fresh, it’s just like magic. the fruit, it’s like magic, it is.
there is something about biting into a peach during the summer. something about the juice dripping down your chin, something about the heat and the way it makes you feel. it makes me smile, it makes me giggle, and when the kids take a bite, it reminds me of why i love summer so much. i still buy to many.
i’ve been really into peaches lately. see i got this job. every week they have these specials. sandwich specials. one of them involves peaches…peaches with bacon. grilled peaches. grilled bacon with peaches. it’s amazing. it’s my downfall. and when i saw peaches at the farmers market…well i had to buy them. i didn’t want to recreate the sandwich, i just wanted the peaches.
i bought to many. i guess i could of baked. i could of, but salsa is more my style. salsa with fresh jalapeno peppers. salsa with fresh red onion. salsa with lots of fresh herbs. salsa with grilled peaches. and then there was this chicken…it sat in my fridge…and i thought tacos. tacos with grilled peach salsa would be awesome.
today is my local market. i’m buying more peaches. to grill, to eat, to enjoy…to make me giggle.
grilled peach salsa
to prep: split peaches, remove pit, grill for 2-3 minutes on each side. let cool, peel off skin.
- cut and add everything to a bowl, mix. let it sit for 5-10 minutes. enjoy.
