• 1 onion chopped
  • 2 cloves garlic chopped
  • 1/2 cup sherry
  • 1 29oz can of whole tomatoes
  • 4 cups of chicken broth
  • salt and pepper to taste

i’ve been craving tomato soup. it’s one of my favorites. seriously, it is.

my dad made it for me all the time when i was a kid along with a huge grilled cheese sandwich! it was our rainy day favorite.

we parked ourselves in front of the tv and all ate together picnic style. we dipped, we giggled, my sister and i thought it was the best. it’s a fond memory…something i do with my little ones today.

so when it rained…you know, for the past 5 days, i couldn’t help myself. i knew what we were having for dinner, i knew it was tomato soup with a huge chunk of bread for me and grilled cheese for the kiddies.

we giggled, we laughed. we talked about my childhood. we had a great time. we even forgot about the rain for a little while.

memories, they all came flooding back. my hopes…the kids will remember days like that and recreate them with their little ones…

classic tomato soup

  1. in a dutch oven or soup pot saute onion and garlic for about 5 minutes or until onion becomes translucent.
  2. add sherry and cook for about 2 minutes or until half evaporates. add can of tomatoes and broth. bring to a boil and then simmer for about 30-45 minutes. (in order to break up the tomatoes i like to take my kitchen shears and cut them right in the pot. less messy).
  3. with a blender or imersion hand blender, blend the soup till you have reached your desired consistency.

great rainy day meal that takes no time at all to make. serve with grilled cheese, a simple salad or just it our of mug and enjoy.
