• 1 1/3 cup water
  • 1 egg + 1 yolk
  • 3 tbl butter cubed
  • 3 cups bread flour
  • 1 cup graham flour
  • 1/2 cup non-fat fry milk
  • 1/3 cup light brown sugar
  • 1 tbl gluten
  • 2 tsp sea salt
  • 2 1/4 tsp SAF yeast

i suck at slicing bread. lets be honest here. i just don’t have the patience.

my kid complained my slices were to big, my husband ate more then i could bake and my dogs were getting plump from nibbling on end pieces.

then i saw my friends son whip out a roll she made with her bread machine. it stopped me in my tracks…what? huh? you can do that?

(see if i read the book, i would know this)

i use the bread machine because its virtually impossible to mess up the knead dough rise thing. for some people, you know like myself, i need that comfort. i embrace it. but taking the whole thing out of the machine worried me.

it worked.

i have rolls. warm, soft, fresh baked rolls. rolls we smother in butter, jam and cream cheese.

the roll. a simple sandwich roll using my favorite bread recipe. light, healthy, homemade.

from me to you, a simple bread machine recipe that bakes in your oven. in muffin tins, repeat: in your oven :-)

graham rolls adapted from the bread lovers bread machine

  1. add wet then dry ingredients to bread machine and choose the dough cycle.
  2. in the meantime, lightly spray 2 muffin tins with cooking/baking spray and set aside.
  3. when dough is ready, remove from machine. shape little balls and add to muffin tin. one small (medium meatball size) ball to each spot. cover with a kitchen towel and set your timer for 45 minutes.
  4. preheat your oven to 375. Since both of my bread tins were different they cooked at 2 different baking times. one tin was done in 12 minutes and the other one just about 18. so keep an eye on them, when they are a medium brown golden color (see above) take them out of the oven and cool on racks. When cool to the touch put on wire racks.

store in plastic bags. store in the freezer. pre-cut and take as you need. this recipe make 24 rolls. great for lunches…great for snacking…great in general

 ps. a note on graham flour. i use bob’s red mill. this can be found at whole foods, some groceries and online. i ordered in bulk because this is our go to bread.
