happy new year! i hope you all had a wonderful and safe holiday, full of good food and great times.

i know it was just what i needed. we might be a little out of routine, and a little overwhelmed by the start of the week (on wednesday) but it was worth it.

there was good times, there was great food, family, friends and everything you could of asked for.

we ate well. so well my diet started today as well as my new exercise routine. yeah, i had one of those, you know, before the school year started.

so when i had the chance to finally enjoy some downtime with the family we cooked.

boy did we cook.

there was cake…

did i mention my diet started today?

and then there was this…the dinner…the fragrant dish that consumed our house. basil, garlic, chicken…all it was missing was bacon (wink wink).

chicken cacciatore my way

  • 1 whole chicken cut up
  • 1 cup flour seasoned with salt and pepper
  • 1/2 cup canola oil + 1 tbl
  • 1 large onion sliced
  • 2 peppers sliced
  • 5 cloves of garlic roughly chopped
  • handful of basil
  • handful of fresh parsley
  • 1 cup of white wine
  • 10 black olives sliced
  • 1 tbl capers chopped
  • 28oz can of whole tomatoes
  • 1 tsp sugar
  • 18oz of chicken stock
  • salt and pepper
  1. pre-heat oven to 350.
  2. to a frying or saute pan, add 1/2 cup canola oil. clean chicken and drench in flour. brown and set aside.
  3. in the meantime, to a dutch oven or an oven/stove top pot, saute onion, peppers and garlic for 5 minutes. add wine and reduce down to half (takes about 3-4 minutes).
  4. to pot add tomatoes, stock, sugar, basil, parsley, olives and capers. bring to a boil. turn off burner and add chicken to pot.
  5. bake uncovered at 350 for about an hour or until chicken is cooked and falling off the bone.
  6. taste and season with salt and pepper as needed.

i like to serve this with pasta but rice is great as well as a huge salad.
