• 1 whole cornish hen cut in half
  • 1 onion sliced
  • 3 cloves garlic sliced
  • 1 pepper sliced
  • 5 dried peaches sliced
  • 1 tbl chopped chipotle peppers in adobo
  • 1 cup of white wine
  • handful of cilantro
  • handful of parsley
  • 2 cups stock
  • salt and pepper

i love bouncing ideas off my boss. he’s a great chef who’s ideas about food are similar to mine.

we are closed this week.

i just found out that one of my new responsibilities is to be involved in the lunch menu, exciting for me, that means i’m learning!

there is always teasing in a kitchen, so picture that too….and blood, of course….

and then it happened, the dinner conversation.

i am one of those people who is not afraid to ask a question. especially when it’s about food and i have a talented chef sitting right in front of me.

one of our biggest conversations…flavor pairings.  it’s exciting to hear it from a professional, you know, yeah, you did something right.

and i brought up dried peaches…the ones i bought long ago that no one will eat. not even me. what can i add to peaches that i’m braising with wine?

I didn’t even need to ask, I’ve been cooking around him for 6 months and I knew exactly what he would say….

roasted game hens with peaches and chili in adobo

a note about chili in adobo: they are hot, as in spicy. use your judgment, we favor hot and spicy food. start with half if you want or just go for it. to store, chop and pour into a sandwich bag, freeze and chop off pieces as you need. they always come in handy, for ribs, for chili, or even salsas.

  1. pre-heat oven to 350
  2. to a dutch oven add 2 tbl canola oil and heat up. season hen with salt and pepper and then brown. take out of pot and set aside.
  3. in same pot add sliced onion, garlic, peaches and chili in adobo with a pinch of salt. mix and saute for 7-8 minutes or until pepper starts to wilt and onion becomes translucent.
  4. add wine and herbs. cook till reduces to half, about 5 minutes.
  5. add stock mix. nestle hen back into pot and bake until chicken is cooked, about an hour, hour and a half depending on the size of your bird.

serve with grains, quinoa is wonderful and a big salad.
