something you would consider?

the first time my friend brought it up i was a little turned off. i must admit, the thought of kiwi as salsa, well, i don’t know, it just didn’t do it for me.

and then this happened yesterday, a party for 250, help needed in the kitchen, i’ve mastered pan roasted fish. guess who smelled like fish all day.

it was me. and what better to make for dinner when you already smell like fish? more fish. because really, it just doesn’t matter anymore. it’s like waking up with a hangover, a bloody mary always helps (wink wink, and no i would never do that or wake up hungover i’m just saying, my mom reads this….ok, never mind).

and now i’ve been brainwashed because all i could think about was kiwi. kiwi salsa. there was just no turning back.

i had to make it.

and then i did.

this might be my new favorite salsa. please don’t tell her though…i rolled my eyes way to many times for her to be right. ssshhh. man, i know she’s reading this…i did not roll my eyes at you (well, i did, kinda).

kiwi and fennel salsa

  • 5 kiwi’s skinned and minced
  • 1/2 small fennel bulb minced
  • handful or fresh parsley chopped
  • 1 chili pepper chopped (optional)
  • 1 tbl canola oil
  • 1 tbl cider vinegar
  • pinch of good sea salt
  1. chop an add all the ingredients to a bowl. mix. cover and place in fridge, let sit for at least 30 minutes.

serve over fish…fish tacos…hrm…recipe for that to come
