• 1/4 cup buttermilk
  • 1/4 cup sour cream
  • 1 tbl parsley
  • 1/2 lemon zest and juice
  • 1 tbl cider vinegar
  • 1 clove garlic minced
  • a pinch of salt and pepper

here is my confession for the day…there are some days where i just blankly stare at my kitchen…in my fridge, in my pantry. ever have one of those days? i would rather talk about food then cook the food. sometimes i imagine i have someone who makes dinners for me, fights with my kids about what is for dinner, and then cleans up all the dishes. this is where i let out a big sigh.

i had no idea what i wanted to make for dinner tonight…actually i had a thought. i want a big salad full of endive, tomatoes, and blue cheese crumpled on top with a big steak fried in butter.

blue cheese. one of my favorites, especially over salad, melted over steak, in a burger. i had a giant hunk of it. want to hear some bad news? it was bad. really bad, not just cut a chunk off and try bad. i mean not edible bad. sometimes things like this happen, they do, i just made the best of it and moved on. i actually probably had one of the best dinners i have had in a while.

the dinner…it was simple. it was quick. a salad with a creamy buttermilk dressing, how could you go wrong. greens, herbs, fennel, endive, tomatoes, and the topper a melt in your mouth steak smothered with a creamy buttermilk dressing.

  1. in a measuring glass or bowl add all of the ingredients together and mix.

the dressing was quite refreshing. i really enjoyed it and so did e. grilled steak is always a great addition to a salad and with this dressing, wow, so good.
