snow day number 2…which extended our week of vacation. extended, did you see that? so now my kids have 11 days or something of vacation. 11 days…pray for me.

so what do you do during snow day number 1? you shovel. you pray it stops raining, your walkway is turning into an ice rink and the ice dams are sure to cause some damage. i wish i owned a flame thrower. is that to much? you slow cook (beef stew). you think about baking (really, napping, but that never happened and either did the baking because we couldn’t keep up with the snow). and finally, you make salad. cause every beef stew needs greens on the side.

eggless caesar. cause raw eggs scare me. should i mention i also didn’t have eggs. you know, cause when i went shopping for the snowpocalypse i only bought stew meat. i forgot milk too. which meant no one was having french toast.

did i mention the thunder-snow last night?

i digress, a constant theme here i know…so like, take a look. easy to make, just grab a blender and grate some cheese. throw in some agave to sweeten it up, a little salt and freshly ground pepper…now i’m hungry again. thankfully this recipes make enough for the whole week, or 2 days if you live in my house.

eggless caesar salad

  • 2 lemons juiced
  • 2 tbl sherry
  • 1 cup canola oil
  • 1 tbl dijon mustard
  • 2 tbl agave
  • 3 garlic cloves
  • 3/4 cup grated parm
  • salt and pepper to taste
  • handful of croutons (see this page for what to use if you are gf)
  1. place the first 8 ingredients in a blender and blend. taste, add salt and freshly ground pepper to season
  2. spoon dressing over lettuce leaves and top with a handful of croutons.
