• oil to cook lamb and spices, about 5 tbl
  • 6 cardamom pods
  • 6 cloves
  • 6 peppercorns
  • 1 cinnamon stick
  • about 1 to 1.5 pounds of lamb
  • 1 small onion sliced
  • 4 garlic cloves minced
  • 2" piece of ginger grated
  • 2 tbl coriander
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 1 can of coconut milk
  • 2 tbl plain yogurt
  • cilantro optional

i woke up this morning and couldn’t wait to get in the kitchen. it’s just one of those days where i feel inspired and feel like cooking all day.  love days like this.

indian food is up there on my list of “love” foods. i love eating it, i love cooking it, i love all the spices and the smell…i love walking in the house and smelling everything cooking. it smells comforting, can something smell comforting? well, does to me.

here is a simple korma recipe. you can make the korma with anything, chicken, shrimp, beef, veggies, today we use lamb :-) it might look complicated, but it’s not i promise. i actually find that indian food is one of the least complicated cuisines to cook.

lamb korma    (adapted from my one of my favorite cook books, complete indian cooking)

  1. add the following ingredients to your stock pot: oil, cardamom, cloves, cinnamon, and peppercorns, cook for about 1 minute or until you start to smell the spices, add your lamb and brown. take out your meat and discard all your spices but the cinnamon stick.
  2. add your sliced onion, garlic, and ginger, to pot and cook for about 5 minutes, it’s ok if you need to add more oil. add your spices and mix, cook for another minute and then add your coconut milk and yogurt.
  3. return your meat to the pan and make sure all covered in sauce, if not, add a little water. bring your pot down to a simmer and cook 4-5 hours or until your lamb is soft and falling apart. the longer you let it cook the better the spices meld together and the sweeter the dish becomes.

tonight i served this with naan and a saffron rice. sprinkle with fresh cilantro and go for it. so good on a cold night and very filling. great dish to reward yourself for shoveling snow all day!
