• 2 14oz cans of diced tomatoes
  • 1 15oz can of black beans drained
  • 1 can of kidney beans drained
  • 1/2 cup salsa
  • 1 tsp cocoa
  • 2 tbl taco seasoning (the original)
  • 1 onion diced
  • 2 cloves of garlic chopped
  • 2 pounds stew meat, i used pork
  • about 3 tbl of olive oil

this is probably one of the best chili’s i have made yet. thankfully i write all this stuff down as i go along. you should see my recipe files, what a mess.

for this recipe i used pork stew meat i had in the house, you can use beef too. i have yet to try this with chop meat, if you do, please let me know how it turns out.

this was very easy to make, and although spicy, super delicious! hope you enjoy.

crock pot chili

  1. in your crock pot add tomatoes, beans, salsa, cocoa and taco seasoning.
  2. add a little olive oil to a skillet, about 1 tbl, add onions and garlic and saute till onions are translucent, about 5 minutes. add to crock pot.
  3. in the same skillet, add more olive oil if needed, brown your stew meat. add to crock pot.
  4. on a high setting cook for 3 hours, then low for another 3 (if your not going to be home, i am in and out all day, a low setting would be fine for 6-8 hours or more. nothing will happen, the meat will just be really soft and delicious. my crock pot seems to cook on the low side so i start everything at high).

the pork was so soft it literally melted in your mouth. this was probably the best chili i ever made. e ate his directly out of a bowl with rice, i on the other hand elected to go with nachos
