it’s been a long 2 days…friday j and i had a little collision, which in return gave me a mild concussion (he’s fine). i’ve been sleeping on and off since friday and finally started to feel better as of last night. i’m still not sure how i made dinner friday night or blogged for that matter…here is some advice, when your sleep deprived stay away from crazy over tired 4 year olds, your reflexes are just not the same :-)

so tonight’s dinner :-D i was thinking something simple. steak, a rice pilaf and a veg. i remembered a couple weeks back i was blogging and found this recipe for rice. it was made with broccoli which my kids actually like. i have to confess though, the sweet stir fry sauce was really what got me, i wasn’t planning on making the rice. i’ve been trying to find a good recipe for years. j loves stir fried tofu and thought this would be perfect for it. this is now my go to recipe. so here is my spin on it. i changed some things up, and simplified it a little, i also added asparagus as well which was a great addition. (check out my list of blogs, kayotic, great link with great recipes and photographs, not sure where she finds the time!!)

broccoli & asparagus rice with sweet stir fry sauce

sauce:

  • 2/3 cup sugar
  • 2 cups of water
  • 1 grated lemon rind
  • 1 piece of ginger sliced
  • 2 diced garlic cloves
  • 1/4 tsp chili flakes
  • 1 tbl soy sauce

in a small pot (this recipe only makes about 1 1/2 cups after all said and done) combine all of the above ingredients.

bring mixture to a boil, then simmer till the sauce has a syrup like consistency. the original recipe says to strain but i didn’t. i figured letting the ginger, garlic, and pepper flakes marinate more with the syrup can only be good, i did however strain a little out, i had no room in my jars:-) you can cook with immediately or cool off and refrigerate. i made this this morning, so it sat in my fridge all day.

rice:

about 1 1/2 handfuls of broccoli florets

  • 6 asparagus chopped
  • 1 chopped onion
  • 2 chopped garlic clove

  • 4 cups cooked rice
  • 
juice of 1/2 a lemon
  • salt and pepper
  1. saute the onions in olive oil for about 2 minutes, then add broccoli and garlic.
 after about 5 minutes add asparagus, cook for another 5 minutes, until broccoli is cooked.
  2. pour about 1/2 the sauce or more depending on your preference into the saute pan. mix and then add rice and lemon juice.

this was just my side, we had steak which i had marinated in sesame oil, honey, garlic and ginger. i actually ended up throwing some of the sauce on the steak at some point today, i couldn’t help myself. i was walking by the sauce all day and dipping a spoon into it:-) so good.
