• 1 1/2 cups flour
  • 1 tsp salt
  • 3 tbl of sugar
  • 1 3/4 tsp baking powder
  • 2 eggs
  • 3 tbl melted butter
  • 1 1/4 cup buttermilk
  • 1 tsp vanilla

since the weekend is approaching (TGIF) and hopefully you all have off this weekend, i thought a good pancake recipe would help you through breakfast tomorr

my friend, lets call him bob, rarely comes to ny. he lives across the country. when he does come he is on business and we usually just hit local restaurants and bars because he is not here for a long period of time.

bob came over to our house to visit with my monsters, oh i mean kids, last weekend and was hoping for a home cooked meal. i was told by e not to cook, we were going to take him out. bob was a little upset. he was looking forward to a meal and all i had for him was beer and the beet spread i had been working on in the afternoon before he came.

before i go on i am going to make a confession. i buy pancake mix. not just pancake mix, it comes in a container that looks like whip cream :-) why you ask? how many of you have kids and have zero time to get breakfast on the table in the morning before the bus pulls up and everyone is running (me raising my hand). according to bob, i should be ashamed! i am a bit, but honestly, i have no time in the morning. even if i did, i don’t do mornings.

so what am i getting at? bob (that’s him up there) came over in the morning recipe in hand and made me pancakes. real pancakes. pancakes not from a can, not from a box, REAL pancakes. i loved them. i will never buy pancakes mix out of a can again. bob promised me more recipes :-) did i mention he is a great cook?

homemade pancakes     this recipe is adapted from the joy of cooking

  1. to prepare: 2 mixing bowls, a hot griddle
  2. sift all the dry ingredients in one bowl and mix all the wet ingredients in another.
  3. mix all together.
  4. ladle small spoonfuls onto a hot griddle, repeat till you have finished all of the batter.

honestly, i am not a huge breakfast person, i never eat it and if i do it’s an egg on a roll with cheese or if i am having company i make my simple brunch egg, these pancakes were the best i have ever had. which reminds me, i need to go buy maple syrup.
