my friend, lets call him bob, rarely comes to ny. he lives across the country. when he does come he is on business and we usually just hit local restaurants and bars because he is not here for a long period of time.
bob came over to our house to visit with my monsters, oh i mean kids, last weekend and was hoping for a home cooked meal. i was told by e not to cook, we were going to take him out. bob was a little upset. he was looking forward to a meal and all i had for him was beer and the beet spread i had been working on in the afternoon before he came.
before i go on i am going to make a confession. i buy pancake mix. not just pancake mix, it comes in a container that looks like whip cream why you ask? how many of you have kids and have zero time to get breakfast on the table in the morning before the bus pulls up and everyone is running (me raising my hand). according to bob, i should be ashamed! i am a bit, but honestly, i have no time in the morning. even if i did, i don’t do mornings.
so what am i getting at? bob (that’s him up there) came over in the morning recipe in hand and made me pancakes. real pancakes. pancakes not from a can, not from a box, REAL pancakes. i loved them. i will never buy pancakes mix out of a can again. bob promised me more recipes did i mention he is a great cook?
homemade pancakes this recipe is adapted from the joy of cooking
- to prepare: 2 mixing bowls, a hot griddle
- sift all the dry ingredients in one bowl and mix all the wet ingredients in another.
- mix all together.
- ladle small spoonfuls onto a hot griddle, repeat till you have finished all of the batter.
honestly, i am not a huge breakfast person, i never eat it and if i do it’s an egg on a roll with cheese or if i am having company i make my simple brunch egg, these pancakes were the best i have ever had. which reminds me, i need to go buy maple syrup.
Hello M., Mrs. Bob here. I had to laugh at the picture of Bob because it is exactly like most of the pictures I have of him. A bit camera shy maybe? I'm not sure if he mentioned to you, I often substitute whole grain for either all or part of the flour. If you do that it is best to let the batter sit for 15-30 minutes so the flour has a chance to absorb all the liquid. You end up with a much lighter, fluffy pancake. There is a time saver too. I usually make pancakes for Sunday brunch so I double the recipe and do one of two things. I will put the batter into a tupperware and use the rest of the batter Monday morning (pull it out of the refrigerator a few minutes early to warm up a bit) The color usually has started to change to not so pretty but once you stir it up no one is any wiser. The other thing I do is just make all the pancakes Sunday morning and stick them in the refrigerator after they have cooled. Do they taste as good as left overs? I don't think so. Have the kids every said "I refuse to eat yesterdays pancakes!"? Nope!

When I make them (or waffles) I do a big batch and freeze the extras. Homemade Eggos that you can pop in the toaster to defrost!
