my kids love peanut butter. they also love thai food. chicken satay is their favorite. j calls it chicken on a stick. what can be so bad about dipping chicken in a big bowl full of peanut butter sauce? nothing. especially if your family is like mine and they go through a vat of peanut butter a week.
we spend our weekends together. it is important time for us because the week is so chaotic and we don’t spend too much quality time together as a family. my weekend meals are much different then week meals. they are more centered around all of us as a family. fun foods for the kids to eat, which they always help me make, and something we can eat around our kitchen table.
my kids are clowns, we usually spend meals together laughing and listening to j tell us silly jokes or p singing silly songs. so i when i surprised them with this dinner the table was quiet and i had no left overs. j talked about it all night and asked me to make his chicken on a stick again, he also asked me to make more of the peanut sauce next time
i have been looking all around for recipes for the peanut sauce, the chicken i wasn’t too worried about. i found a lot of them. a lot, too many. so stopped looking. then i realized they all had such great ideas and i could do something with all of them.
chicken satay with a peanut dipping sauce
- 1 package boneless chicken breasts cut into kabob pieces
- 10 wooden skewers, soaked in water for at least 10-15 minutes
for the chicken marinade
- 2 tbl olive oil
- 2 tbl GF soy sauce
- 1 tbl lemon grass, chopped
- 3 cloves garlic, crushed and roughly chopped
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1 tsp sugar
for the peanut sauce
- 4 tbl peanut butter
- 1 can of coconut milk
- 2 tsp red curry paste (thai kitchen make GF version)
- 2 tbl brown sugar
- 1 dried chili pepper
- 1/4 tsp of salt
for the chicken:
- into a food processor add all ingredients for chicken marinade. pulse a couple times, i didn’t want it to be to smooth because i wanted to taste some of the flavor, like small little pieces of garlic or the lemon grass. if your not crazy about that keep on processing until it is smooth.
- i had e clean the cutlets for me and cut them up, he then dumped it in a huge ziplock bag were the mixture was waiting. mix it up and take it to your fridge and marinate for 2-3 hours. i made the marinade this morning, so the chicken had been sitting in my fridge all day.
- when you are done marinating, take your chicken pieces and skewer on soaked skewers. grill or broil till cooked. i have a grill pan at home which is useful at times like this.
for the peanut sauce:
- in a small saucepan add all ingredients for the peanut sauce. whisk and cook over a medium low flame. do not let it boil, just cook slowly and wait for all the ingredients to come together. give it a taste, add more salt if needed. i felt the addition of salt to this brought out a lot of flavor in the peanut butter. it’s barley noticeable, just enough however.
plate skewers and serve with sauce. tonight we added some rice and salad. i see this dish becoming part of our weekend routine, especially during the summer when the bbq is always ready to go.
