• about 4-5 sliced of bacon cooked
  • 3 cups flour
  • 1 tbl baking powder
  • 1 tsp salt
  • 1/2 cup of butter
  • 1 cup of cream + 2 tbl for later
  • 1 cup of cheese (i used a light swiss)
  • 2 tbl parsley

i am not a baker, but i’m trying. it’s actually a lot easier then i thought, i just have to keep my mind in the game and not wander. i tend to do that while i am cooking. i think about 5 recipes at a time…you can’t do that when you’re baking.

the thing that hit me last night, you can take a basic baking recipe and really expand on it, if it doesn’t work, you try again. i’m not afraid to screw up a recipe like i used to be. since i started this blog i have become a lot more gutsy about trying to cook new things and really stepping out of my comfort zone. it’s been fun and i am so excited to keep going.

last night i made a potato, leek and corn soup (recipe tk) and i was looking for something to accompany it. i am also looking to clean out my non kosher for passover items before sunday, wish me luck with that. while i was tearing through my pantry and fridge i found a package of cinnamon buns, that won’t do, how about scones? something savory with cheese and oh look, there was the bacon :-)

i found a basic scone recipe and replaced some of the items and added a few more. these were amazing. the bacon added a nice crunch and the cheese added a lovely flavor. savory, crunchy, flaky, soft and so yummy!

bacon and cheese scones
what you will need: a cup or a round cookie cutter, a mixer, a cookie sheet lined with parchment paper
  1. in your mixing bowl, add flour, baking powder, salt and butter. turn your mixer to a low speed and start mixing. the mixture will become crumbly that is what you want. add your cheese and bacon. continue mixing.
  2. add 1 cup of cream to the mix, keep on mixing for about a minute, it will form a sticky dough. stop mixing and lay it out on a floured surface.
  3. all the recipes i have seen for scones say do not over mix or your scones will be tough and chewy, i gently laid the dough on my floured cutting board and gently flattened it out. i then took a rolling pin and gently spread the dough, it was like a half an inch thick. i then took my cup and made circles with the dough and laid then on my cookie sheet.
  4. have left over dough? gently mix together and repeat.
  5. brush that extra cream over your scones and cook at 400 for about 20 minutes.
  6. let them rest for about 4-5 minutes, serve and enjoy!
