• 4 garlic scape's
  • half a lemon juiced
  • 1 15 ounce can of cannellini beans
  • 1/4 cup extra virgin olive oil
  • 1 tbl fresh parsley
  • 1 tsp fresh cilantro
  • salt and pepper to taste

last week i picked up garlic scapes at the farmers market. they have been showing up (here and there) as a replacement for garlic. i decided they added great flavor but what else can i pull of with this greenish looking onion that is really garlic? so i did some research and came up with a couple great recipes, this being one of them.

wondering what a garlic scape is? did you know garlic is actually a bulb? have you ever left garlic out to long and it grew a stem? the stem flowers and this is the garlic scape. it is usually is cut off before the bulb, which you can find at all your local markets, ripens. they are curly like and smell wonderful. you can use it in pesto, in salads, in everything you would use garlic for. they are long, thin and green, kind of spring onion (scallion) like. it might look scary and it might look like something you would never pick up, but if you see a garlic scape, grab it. you wont be sorry.

one of the recipes i found was for a white bean and garlic scape dip. it was easy and simple and delicious. serve up with some crackers or even add it to a sandwich instead of humus with some roasted veg.

i use one of those small counter top food processors for this. it’s a small batch of spread, about a cup and a half when all is done. to help my food processor along i like to roughly chop the scape’s and fresh herbs.

  1. in your food processor, pulse all ingredients except for the beans to mix and finely chopped.
  2. add the beans and puree.

serve with crackers or on toast. this is a wonderful spread that everyone will go crazy for.
