• 10 whole lettuce leaves
  • about 2 cups of cut up shredded chicken
  • 1/2 tsp turmeric
  • 1/2 tsp red curry
  • 20 grapes
  • 1 tbl of cilantro
  • 1 tbl parsley
  • about 1/4 cup mayo
  • about 1/4 cup plain yogurt

sometimes i burn things…sometimes it’s pretty bad. sometimes the meal survives.

i really was excited about this chicken too. i happen to come across this cooking show the other day, extra virgin. ever see it? it’s on the cooking channel with one of my favs debi mazar (and her husband gabriele). it’s basically about bringing a taste of tuscany to america. good idea right? the other day they featured a recipe for this grilled chicken. you take a whole bird, cut it down the back bone and then marinate it. amazing right, well it looked amazing. until i got my hands on it.

anything with whole chickens as you know kind of freaks me out. i just do not love the whole bird thing. raw chicken in general just doesn’t do it for me. but i do it, why? because my family likes chicken (i’m a good mom/wife sometimes). my friend, has been non stop raving about a chicken she bbq’d whole on her grill. she just grilled it…a whole chicken. if my friend, debi and gabriele can do it, so can i. so i went for it…

a little olive oil, lemon, fresh herbs and garlic, it marinaded for 3 hours! it was supposed to be moist and the skin, a little browned and crunchy. it was crunchy all right. just not how i imagined it.

and here it is…

mmm…burnt.

i took my eyes off the grill for a whole minute and the next thing i knew…burnt chicken. luckily only the skin and some of the chicken was burnt. lesson #1 when grilling a chicken, do not walk away from the grill (insert smile here). i was able to save enough of it to feed the kids and e, and then i had extra.

the next day we had some company and i needed a quick side for soup that i had made (that recipe to come). i grabbed the chicken, and since the soup had turmeric in it, decided on a creamy curried chicken salad. i’ve made curried chicken salad tons of times but i just went for the simple, this time around, i got creative and i am so happy i did.

so i managed to save the bird. just not all of it. i get over these things really quickly however. everyone burns food right?

red curry chicken salad lettuce wraps

prep:

  • carefully break off lettuce leaves and clean
  • clean and half your grapes
  1. in a bowl mix chicken, herbs, yogurt, mayo, turmeric, curry and grapes.
  2. spoon mixture into lettuce leaves, like a taco, and plate.
  3. sprinkle some extra herbs over and serve.
this was super yummy and really good on a hot day after swimming for hours with the kids. it was simple, quick and and can be made right before you serve it.
