- 1 cup of pomegranate molasses
- 1 cup of pomegranate juice
- 1 chili pepper chopped
- 4 garlic cloves chopped
- 1 shallot sliced thinly
- and the zest of 1/2 a lemon
remember i told you about ad hoc at home by thomas keller? i made that yummy creamed corn. we still are talking about it here (i bought more farm stand corn this week). it will make a great accompaniment to this next recipe.
this is definitely a great dish to serve this weekend if you are entertaining. just picture it…
you start with the bean dip. serve with tortilla chips, some simple salsa and guac.
for dinner: creamed corn, a wedge salad, and these wings (could use any chicken piece or a mix of).
dessert: a simple fruit salad with tons of watermelon.
the original dish calls for quail (duck, now that would be awesome) but i wanted to make it a little more kid friendly, so i chose chicken wings. i added a little spice (i think it could of used a little more) because chicken wings need spice (come on, buffalo wings!).
it was a fun dish to make, after i made one batch of the pomegranate molasses i ended up making one more because it was that good.
this recipe may seem a touch complicated but it is easier then you think. trust me. i freak out the first time i cook from recipes. yes, i freak out. this one was easy to make and it was so worth it.
pomegranate glaze:
- to a saucepan add 2 cups pomegranate juice, 1/2 cup sugar and the juice of 1/2 a lemon. bring to a boil, simmer for an hour until it reaches the consistency of molasses.
- whisk all the marinade ingredients together and pour over chicken. marinate for 4-6 hours. this is something you could overnight easily.
- when it’s time to cook, take the wings out of the marinade and bbq, do NOT throw out the sauce.
- take the sauce and bring it to a boil on the stove top then down to a simmer until the sauce reaches a thick consistency, like syrup. it takes about 20 minutes.
- when chicken and sauce are ready, toss chicken in the sauce, fork onto a platter and serve.if you like spicy add another chili pepper, i am making this again this weekend for adults and i am planning on it. chop some scallions and sprinkle on top, the green of the scallions will really bring out the color of the wings.
