- 1 stick of butter melted
- 1/2 cup of sugar
- 1/2 cup of brown sugar
- 1 egg beaten
- 2 tsp vanilla
- 1 cup of flour
- 1/2 tsp baking powder
- a pinch of salt
- 3 oz of chocolate chips (about a 1/3 of a cup)
i couple months ago i picked up a new cookbook, i do that often. i always pass over the baking section because let’s face it, i suck at baking. the whole measuring things…we’ve discussed this before i’m just not good at it.
river cottage every day. they claim the recipes are simple and for the every day cook. they are 100% right. this is the 5th recipe i have made from this cookbook, simple, easy, and the most important, it tastes amazing. the best part about this book and author, he eats local! (did you hear me sing that?) i loved reading the intro. i read it over and over again because i loved it that much. big local food supporter, love that he preaches but doesn’t really. he just loves food as i. wonderful, that just makes me want to cook through the whole book even more.
back to baking i can always find a a way to change a recipe but for baking, well, until i can get more comfortable i will not change a thing. i almost can’t wait for that day. i would love to look at a cup of flour and say, wow, i can do this with it (you might be waiting a while).
for now, i just wanted to share this recipe. last night j had a friend over and they wanted to make dessert. we see him once a week and the kids love to have dinner together. dessert in our house consists of ice cream or fruit. yesterday, they wanted chocolate chip cookies. j actually told his friend, my mom is a really good cook, but she doesn’t like to bake…i proved him wrong (i also followed the recipe).
- in a large bowl, add sugars and then pour in melted butter and mix well.
- in a small bowl, i beat the egg and then added the vanilla, pour into sugar and butter mixture and mix well.
- sift in flour, baking powder and salt. mix well with a wooden spoon. add chocolate chips, mix.
- scoop about 1 tbl of the cookie dough onto a baking sheet lined with parchment paper. bake at 375 for 8-10 minutes.
