- 4 garlic cloves
- 1/2 tsp red pepper flakes
- 1/4 cup parsley
- pinch of salt
- 1/2 a lemon, peel and all
- 1/4 cup olive oil
isn’t that beautiful? the colors…to bad you can’t smell this because it’s divine.
on my quest to eat smaller portions and paying attention to what i am putting in my body something like this gets me excited.
it always amazes me how something with so few ingredients tastes so good.
you see that ingredient list…it’s as easy as throwing it all in a food processor and hitting a button. how much easier can that be?
pour it over chicken or lamb (lamb is a winner, tried it last night and ah..wait for it…mazing!). try it with veggies or even pasta. you seriously can’t go wrong.
garlic, parsley and lemon vinaigrette adapted from bon appetit
- add the following to your food processor and pulse a couple times: half a lemon (rind and all minus the seeds, i gave it a good chop before i threw it in), garlic cloves, parsley and pepper flakes. then add olive oil.
use this to marinate steak, lamb, chicken, veggies or use it as a dressing. pulse to your desired consistency and enjoy!
