- 1 ham steak, about a pound
- 1 onion
- 2 cloves garlic
- 1 carrot
- 1 large butternut suash
- 4 cups of stock
- salt and pepper to taste
- 1 cup of split peas
no joke. my friend won a 31 pound butternut squash at the farmers market last week.
31 pounds.
seriously.
it was the size of my 3.5 year old (and her’s too, that’s how she guessed the weight).
i heard the announcement. she was gone. i’m a good friend.
a 31 pound squash is no joke. i carried it around my waist. it was like being 9 months pregnant all over again (except i gained 45 pounds not 31).
when my partner saw me walking towards the car i got the look of death (he was on a phone call). i can read his mind and i knew what he was thinking. there was eye rolling, oh yeah, i saw it.
my wife has totally lost her mind. i know she loves the market but this is ridiculous. it’s not even thanksgiving what the hell was she thinking. who did i marry? i’m not carrying this!
after knowing each other for almost 10 years i knew exactly what he was thinking. after all, i did bring home a snake squash the size of my 6 year old earlier in the season.
so i tried to explain via mental telepathy and tried to smile, after all, there was fire coming out of his ears.
i swear, i did not buy it! she won it! i swear. it’s not mine. really, i didn’t buy it. i’m not crazy.
i closed the door and slowly backed away from the car.
try explaining that via mental telepathy. seriously, it was hard.
needless to say…i got a piece. because no one can eat 31 pounds of squash by themselves. no one.
that’s my story. if anything i just outed myself as a food hoarder and totally embarrassed my husband. but that’s what i do best.
{crock pot} butternut squash split pea soup
- heat up about 1/2 tbl of oil in a frying pan. cut up your ham steak into small bite sized pieces. fry up really quickly and add to crock pot.
- to same pan, saute chopped onion, garlic and carrot in 1 tbl of oil. add to crock pot after onion is translucent and carrot has softened, about 5 minutes.
- to crock pot add stock, squash and split peas.
- cook on high 3-4 hours, low 8-10.
the butternut squash will basically fall apart and make the soup all creamy. i, being me, took my immersion blender and gave it a quick whirl. apparently my kids wont eat bite size pieces of ham…guilt or something?
