one of my favorite greens is broccoli rabe.
there is just something about the taste. it’s sweet — yet kinda bitter.
it reminds me a lot of a friends house i ate frequently at as a young adult. broccoli rabe with whole cloves of garlic and olive oil. still to date, one of my favorite sides that i sometimes consume as a meal.
many of my family (mostly just the boy and girl) do not share the love. broccoli might be a huge hit here, but broccoli rabe, nope. nadda. i don’t usually event try. not lovers. so when i found the sweet sausage in the back of my freezer from one of my favorite local farms i just new what to do.
me and the husband, my favorite veg, sausage from my favorite farm. done. a meal. and a quick one too.
sweet sausage & broccoli rabe
- 1 onion minced
- 4 cloves garlic sliced
- 4 links of sausage taken out of its casing
- 1 bunch of broccoli rabe
- 1 cup water
- 1 tbl Harissa
- handful of basil
- salt and pepper to taste
- sauté onion and garlic in a large sauté pan in a tbl of olive oil for 5 minutes or until onion is translucent.
- add crumbled sausage and mix. cook sausage till almost cooked through.
- at this point, add broccoli rabe, water and Harissa. bring to a boil and then reduce and cook till half the liquid remains.
- add pasta, toss.
serve with some parm, crusty bread and enjoy.
Reminds me of a plate that my Italian grandma used to make as she loves broccoli rabe! Looks tasty.
