it’s just the beginning…

watermelon, tomatoes, peppers, cucumbers, my garden is finally thriving and the farmers market is bustling with great finds.

on hot days you crave something refreshing, something cold, something to fill you up but not put you to sleep (food comas in the summer never end well).

salads are all sorts of fun…but sometimes, sometimes you want to sit down and have soup. yes, i said soup. in the summer. but not hot soup. possibly warm, maybe with corn (that kind of rhymes)?

watermelon is a huge staple in my house. during the summer it’s served with almost every meal. my kids adore it, we make ice pops, for bbq’s i chop it and make fruit salad, i serve it with cheese, i add tomatoes (hrm….) top with with a fruity balsamic (the wheels are spinning). but soup my friends, that’s where it’s at (for now).

a simple concoction of veggies, herbs and fruit. a quick blend and a meal for all.

chilled, light…perfect for summer.

watermelon gazpacho

  • 1/2 a large watermelon
  • 1 red onion
  • 1 red pepper
  • 1/2 a seedless cucumber
  • 4 garlic cloves
  • 1 jalapeño pepper
  • handful of cilantro
  • 3 limes juiced
  • salt and pepper to taste
  1. cut, chop and add all ingredients to a blender. pulse till you reach your desired consistency.
  2. taste. season with salt and pepper.
  3. chill for at least an hour.
