sorry. yes, i’m apologizing again.

the holiday caught me off guard.

thanksgiving and hanukkah all in one weekend. thankfully it doesn’t happen again for another 70,000 years. i spent much time with family. relaxing, taking it easy. ignoring my emails, trying to forget about the internets…

and then there was more tests. i have been in and out of the doctors office all week. blood work, more blood work…and yes, more blood work. thankfully all the tests so far has come back negative. nothing. no answers.

i’m starting to think they might never have an answer…so i’m just hanging in there. praying my stomach stops cramping. praying i’ll get more energy, hoping for something, anything. maybe just one answer.

in the meantime, cooking has kinda taken a back seat. i’m just not interested. just not feeling creative. not really in the mood to experiment. when i have a moment, all i really want to do is sit down. rest. until these ribs fell out of my freezer and literally smacked me in the head.

every since i gave up gluten i find myself craving meat. a lot of meat. i mean like for every meal. maybe it’s the cold weather, maybe it’s lack of creativity, grilling a piece of meat is easy. throwing spices together even easier. but the craving won’t go away.

so i rewind a second, the ribs hit me in the head. i wasn’t in the mood to take out my crock pot (but if you are check this out) and i was freezing. turning my oven on seemed like a no brainer. warmth…hell yes.

so i lined a large cookie sheet with tin foil and grabbed some dark brown sugar.

i kept warm. i drooled (you know, cause it smelled so good) a little. i made dinner.

dry rubbed ribs

for spice rub:

  • 1/2 cup dark brown sugar
  • 1 tbl garlic powder
  • 1 tbl onion powder
  • 1/2 tbl cinnamon
  • 1/2 tbl ground red hot pepper
  • 1 tbl salt
  1. mix all of the ingredients together in a bowl.

how to assemble the ribs:

  1. line a large cookie sheet with tin foil. enough to make a package for the ribs.
  2. take one rack of ribs. clean and pat dry with a paper towel.
  3. place ribs on lined cookie sheet and rub the spice mixture all over the ribs (both sides).
  4. seal up foil and bake at 200 for 3 hours.
  5. at the point take the ribs out of the oven. you don’t have to, but i prefer to cut my ribs at this point into separate pieces. take a little bbq sauce (pick your favorite one) and drizzle a little on each rib.
  6. broil for 3 minutes (or more if you like) keeping an eye not to burn the ribs.
