• 1 cup of olive oil
  • half a cup grated romano/parm cheese
  • minced garlic
  • chopped basil
  • chopped parsley
  • salt and pepper

i was craving carbs so tonight’s dinner was very simple. i made a quick plum tomato sauce with some pasta, salad and a garlic bread smothered in my favorite olive oil and herb dip.

a while back i was walking through stew leonard’s and spotted this bread dip. i looked at it and then put it back down, i got distracted by a screaming child. when i got home i realized i never put it in my cart. i was very sad but i knew it had to be fairly simple to re-create

it’s really simple actually. some olive oil, basil, fresh garlic and cheese. it’s great just as is, a dip. serve with fresh baked bread or you can take it a little further and spoon some of that oil on a fresh baguette, heat it up, and make garlic bread. my favorite is actually putting it over pasta with grilled shrimp. i can’t begin to explain to you how good it is.

  1. add all ingredients to a jar and cover. shake it.

let it sit, allowing all the flavors to marinate, for an hour or two. put it in the fridge, when ready to use take it out and enjoy.
