i’m still blogging about ice pops…
cause damn…how good is it to bite into one of these things after a hot sticky day?
you know what i’m talking about right? it’s just getting hotter.
so you got your fresh fruit, your favorite yogurt…and coconut water, of course, cause we are addicted to coconut water right now. are you?
man, i’m sitting here thinking about more flavor combinations…cause i just want more. mango, peaches…cherries. how about plums? wine berries, which we can’t stop picking right now. i just can’t stop. when is the next farmers market…i need fruit.
oh! and the kids…one after another…begging for more. then there is me, sneaking them after they run off to bed.
sometimes i get busted. but whatever…it’s ok, i secretly give them bites…no one knows, well, you do now.
i. can’t. stop.
so here…after a small rant, another recipe, another ice pop. another way to cool off.
strawberry/blueberry ice pops
- 1 cup of strawberries sliced
- 1 cup of whole blueberries
- 1/4 cup sugar
- 2 cups of coconut water
- 1/4 cup yogurt
- to a bowl add strawberries, blueberries and sugar. mix and let sit for 10-15 minutes.
- to a blender add strawberry mixture, coconut water and yogurt and blend.
- pour into ice pop mold. freeze.
makes about 16 small ice pops or 10 larger ones.
