- 5 tbl olive oil
- 3 pieces of bacon roughly chopped
- 1 onion minced
- 3 cloves garlic roughly chopped
- 1/2 tsp hot pepper flakes
- 3/4 of a can of whole or crushed tomatoes
- 1 tbl fresh basil chopped
- 1/2 cup parm cheese
- salt to season
at a friends house the other day i spotted lidia’s Italy from across the kitchen.
just a day before i had been looking at one of her cookbooks at tarry market. i slowly ran walked over and took it off the shelf.
i do stuff like that, you got me.
and then i took it home.
i put the kids to bed and sat on the couch. and then i found this…bacon, onions, tomatoes, are you kidding me, YES!
make this, i insist.
spaghetti with a bacon & onion tomato sauce adapted from lidia’s italy: maltagliati with onion-tomato sauce
- in a skillet, warm up half the olive oil and stir in bacon. cook stirring for a couple minutes. you don’t want to brown it, just cook it. stir in the onions, garlic and pepper flakes, saute for another 5 minutes on a medium simmer.
- pour in the tomatoes and bail, season with a pinch of salt. bring to a boil then a back to a medium simmer for about 10 minutes.
- in the meantime, boil your pasta. when it is done, add to your sauce. toss with half the cheese and reserved olive oil.
- plate and sprinkle with extra cheese.
