• 2 cloves of garlic chopped
  • 3 slices of pancetta sliced
  • 1/4 cup vodka
  • 1 1/2 cups heavy cream
  • 1/2 cup tomato sauce

vodka sauce was a lot easier then i thought it would be. i have actually never made it before. it is a dish i just order when i am out because it just seemed complicated. anything but complicated are my thoughts now. vodka sauce has a total of 5 (or 4 if you don’t eat meat) ingredients. it is a real quick and simple sauce to make when you need to pull something nice off quick. got a jar of sauce sitting around or some left overs from a couple nights ago? got a drop of vodka left? a 1/4 of a cup is all it takes.

penne is the usual pasta you find vodka sauce paired with. if you keep up with me on fb i posted a recipe from top chef the other day and it totally got me interested in making gnocchi instead of buying it. i looked all over the place for a recipe and because i had no ricotta to make Lidia’s (next time) i made michael chiarello’s potato gnocchi.

great recipe. the gnocchi were light and fluffy and really had an amazing taste. they looked like cute little pillows. here is a great tip for making gnocchi, did you know you can microwave the potatoes and then just mash them with a fork? it sped up the process and tastes exactly the same. would i make these on a regular basis? no. i had some extra time between the kids going to bed and e getting home (when i am bored i cook, you know, instead of clean).

this was a wonderful dish that ended a great day. it was creamy and full of tons of flavor from not only the pancetta but the tomato sauce. want to make this vegetarian? easy, just skip the pancetta.

vodka sauce
  1. in hot oiled skillet, add garlic and pancetta. saute for about a minute making sure not to burn the garlic, add the vodka. it will boil up (according to the internets, sometimes it could even flare so be careful). let it cook down for about a minute or two.
  2. add cream and bring up to a boil, reduce heat and bring to a simmer. mix every so often, it should reduce by half. add your tomato sauce.
  3. give it a taste. we didn’t need to add salt or pepper, you might however, so throw some in and toss with pasta.
reminded me of my favorite dish that i used to only order out, now i can finally make it at home:-)
