• 2 potatoes cleaned and sliced (i leave the skin on)
  • 1 egg white whipped
  • a touch of salt
  • cooking spray

my kids love french fries, they ask for them morning, noon and night. i hate giving them fried foods, it’s bad enough they eat so much junk for snacks, so when i saw this recipe i knew it was for us.

i used to watch a lot of food tv, now i watch a lot of cartoons. when i do get the chance, i try to watch the news, you know, so i kind of know what is going on in this world. a couple years ago emeril used to have a tv show based out of whole foods. the name is escaping me but it was a good show. one episode in particular stuck me. it was a show about cooking healthy for your kids.

unfortunately the only thing i remember is the recipe for french fries. it’s easy, it’s healthy and they taste just like fried fries. all you need is an egg white and 2 potatoes.

no fry french fries

  1. clean and cut your potato. pre-heat your oven to 400 degrees.
  2. crack your egg and separate the white (save the yolk for something else). take a whisk and whisk for about a minute. it will become frothy. feel free to season the white, i just use a touch of salt.
  3. take a baking sheet and spray with cooking spray, which ever kind you prefer, i use an olive oil spray. lightly coat the baking sheet.
  4. take your potatoes and mix them in the bowl with the egg whites (i do this by hand). gently take them out, and lay them out on the baking sheet making sure they are all separated.
  5. cook for 10 minutes. take a spatula and flip them. set your timer for another 10 minutes and flip them again. give them another 5 minutes or so and they are done.

crispy on the outside, soft on the inside. the best part, they taste just like fried fries but better!
