• about 2 cups of cooked rice
  • 1/2 lime, zest and juice
  • about a handful of cilantro
  • a little salt to season

once in a while i don’t feel like cooking. i am sure you get it, sometimes it’s just that kind of day where chinese food sounds really good. usually when we order in we order to much and usually they give us tons of white rice. what do you do with all that white rice?

sometimes i make rice pudding, but i am the only one here who eats it. most of the time i try to use it the night after in or as a side of what ever i am cooking but usually it gets thrown away (or the dog gets it). the other night we made short ribs and i needed a side. when i opened up the fridge, this was right there, staring at me, waiting to be used.

since my garden is planted i have plenty of herbs and for some reason, i had limes, i decided to be creative, and i am glad i did.

about 2 cups of cooked rice, a lime and some cilantro is really all you need for a delicious side that compliments anything from steak to chicken to fish or vegetables. give it try when you have leftovers, you wont be sorry.

cilantro lime rice

  1. the easiest way to heat up left over rice: in a pot, add about a 1/4 to a 1/2 cup of water, add rice and set on a low simmer covered for about 5 minutes. once in a while give it a little mix.
  2. when rice is warm, add your zest, juice and cilantro. mix and taste, add a little salt, it really brings out the flavors, not a ton, just a pinch will do.
  3. at this point i keep the flame to a low simmer and let it sit covered for about 2 minutes.

that’s it, cilantro lime rice! on my way to the market in a few, i am so excited for all this farm fresh produce!
