so i’ve totally raved numerous amounts of time about this guy. i swear, he doesn’t know it yet (i guess now he does) but one day you will find me working in his kitchen. i love walking into his place, i learn something new every time. he is not only a great teacher but a great chef. i adore his cooking. really, if you are fans on twitter you have seen the pictures. i am totally convinced eric is trying to make me gain weight however so i can do another cleanse (really, like i won’t be doing another one soon anyway!).

i am so excited to have eric post today because he has some really amazing news. news i wanted to share with you but since it is his news i let him (wasn’t that nice of me?). so take it away eric! let the people know what’s going on (after you read this go get a sandwich, you won’t be sorry).

I am Eric Korn, the chef/owner of Good-Life Gourmet in Irvington NY.  When Meredith asked me to write a guest blog I happily agreed without stopping to think about the fact that my skill set lies in burning my hands and cutting my fingers, not sitting down and writing a well thought out blog.

That said … here we go –

Between catering parties, making sandwiches and teaching cooking classes I am in the kitchen cooking all of the time.  I love it and am always looking for a new way to challenge myself.  Our newest venture is opening a pop up restaurant.

What is a pop up restaurant??  It is a restaurant without a set location – every month or so we plan to find a new spot and pop up for a few days.  We will redecorate, open in a hurry, serve some great food and then disappear just as quickly as we opened.  Hopefully it will be a fun experience for everyone.

I think every chef dreams about opening a restaurant one day and while I have my sandwich shop and my catering kitchen, this is my first shot at opening a restaurant.  I am excited, and petrified at the same time – everywhere we cater people love my cooking and we always get great feedback on our sandwiches, but will they like our restaurant?  Will they come back?  Am I a crazy person trying to successfully open a restaurant for three days?

We decided to call the pop up Restaurant Maize.  With the last name of Korn, how could I not tie it in?  We planned the menu based on flavor combinations we have been experimenting with in our sandwiches and are very excited to turn them into true restaurant dishes.  Items like our braised bacon, roasted chicken and potato latkes we have been experimenting with for years – the kimchi and braised pistachios are newer projects.   I can’t wait to see them on fancy plates going out of the kitchen!
