• 1/2 cup coconut milk
  • 1/4 cup milk
  • 1/2 cup plain yogurt
  • 1 mango skins removed and chopped
  • 1 1/5 tbl of sugar

ask my kids what they want to drink they ask for smoothies. during the summer it’s easy because fresh fruit is always available. it’s sweet and plentiful, during the fall months fruit just isn’t as good.

every week during the summer we attend our towns farmers market. as well as local farms, local restaurants also attend. we have some good stuff here, including one of my favorites, our local indian restaurant. one of my kids favorites, the mango lassi. it’s full of all sorts of good stuff, yogurt, milk, mango’s. it’s a simple shake that not only tastes good, but it healthy and very kid friendly. the best part, they can help pour and hit the buttons on the blender (j’s favorite part).

we make smoothies often but the juicer is more my style, i love a good carrot apple juice. when i had extra coconut laying around and mango’s i picked up (4 for 2 dollars) i could not resist.

it’s a simple smoothie you can adjust to your liking. use canned mango’s instead of fresh if not available. if you don’t like coconut milk, try just using regular milk. it makes for a great after school snack as well as a great addition to dinner or even as a quick breakfast.

mango lassi     makes about 2 children’s servings

combine all of the above in a blender and blend for about a minute.

for my kids i serve as is over ice with a fun straw. for myself, i love to sprinkle a touch of cardamom over, it adds a little zing and makes the flavors really come out.
